Nothing fancy

Serves 4

  • 1 onion
  • 30g fresh coriander
  • 3 garlic cloves, crushed
  • 2.5 cm ginger, grated
  • 1 tsp chilli flakes
  • 2 tsp gr. cumin
  • 1 tsp turmeric
  • 4 tsp graham
  • 1 tsp caster sugar
  • 1 tsp gr. coriander
  • 1 tsp fenugreek (or mustard)
  • 200g red lentils
  • 400g ch. tomatoes
  • 500ml veg stock
  • 400g coconut milk

  1. Sautee the 1 onion, 3 cloves of garlic, 2.5cm ginger and coriander stems
  2. Mix in all the spices and sugar and then the lentils
  3. Pour in the 500ml veg stock, 1 tin of chopped tomatoes and the tin of coconut milk
  4. Put the lid on and simmer – stir regularly otherwise it will catch on the bottom and form a skin on the top
  5. Its done when the lentils are mushy but still holding their shape
  6. Serve with the coriander leaves (and maybe try a little fresh red onion finely chopped), mango chutney and flat breads
