Coconut & Lime Cake

Loaf tin

Cake

  • 175g butter
  • 175g caster sugar
  • Zest of 3 limes
  • 3 eggs
  • 1 tbsp milk
  • 150g sr flour
  • 1/4 tsp xanthan gum (if making w/ gf flour)
  • 50g desiccated coconut

Drizzle

  • Juice of 2 limes
  • 50g caster sugar

Icing

  • 120g icing sugar
  • Juice of 1-2 limes

It’s been a while, so can’t give an exact score… but cake is usually pretty good

  1. Pre-heat oven to 160c
  2. Grease and line the loaf tin
  3. Mix together the 175g butter, 175g caster, lime zest from 3 limes, 3 eggs, 1tbsp milk, 150g sr. flour and 1/4 tsp xanthan gum (only if doing gf). Once combined, whisk for another minute or two until it looks airy
  4. Mix in the 50g desiccated coconut
  5. Pour in to tin and bake for 45 mins
  6. Mix together the juice of 2 limes and 50g caster sugar for the drizzle, then as soon as the cake is out of the oven – stab all over with a skewer and then pour over the drizzle and leave to cool
  7. Mix the 120g icing sugar and lime juice from 1-2 limes (and maybe some water if too thick) and then spread over the cake
