- 5oz pl. flour
- 5oz sr. flour
- 2oz custard powder
- 3oz caster sugar
- 6oz butter
- 1 egg
- For gf, add 1/2 tsp xanthum gum
Icing - 4oz icing sugar

- Preheat oven to 180c
- Mix all of the biscuit ingredients together (sieve the custard powder if lumpy) until it forms a dough
- Roll out to c. 5mm thick (unless you like your biscuits a bit softer and thicker)
- Cut out biscuits and place onto lined baking tray
- Bake for c. 12 mins but depends on size and how crispy you like (should be starting to turn a bit more golden)
- Once cooled, spread over icing on one biscuit and pair with another (like a custard cream!)
