Biscuits

  • 5oz pl. flour
  • 5oz sr. flour
  • 2oz custard powder
  • 3oz caster sugar
  • 6oz butter
  • 1 egg
  • For gf, add 1/2 tsp xanthum gum

    Icing
  • 4oz icing sugar
  • 2oz butter

  1. Preheat oven to 180c
  2. Mix all of the biscuit ingredients together (sieve the custard powder if lumpy) until it forms a dough
  3. Roll out to c. 5mm thick (unless you like your biscuits a bit softer and thicker)
  4. Cut out biscuits and place onto lined baking tray
  5. Bake for c. 12 mins but depends on size and how crispy you like (should be starting to turn a bit more golden)
  6. Once cooled, spread over icing on one biscuit and pair with another (like a custard cream!)
